Warm Hummus Tomato Dip

This is the best ever I’m-in-a-freaken-hurry-and-I’m-hungry kind of recipe. Perfect for parties as an appetizer, served alongside a salad for a meal, or eaten alone in the bathtub, this recipe can be whipped up quickly and is still super satisfying.

2 cups marinara sauce (I love the one from Costco-or make your own if you fancy!)

1 cup hummus (I love the hummus from Mercadona, and of course you can make your own but I’m lazy)

2 tablespoons vegan parmesan (optional, but recommended)

1). Preheat oven to 200°C/375° fahrenheit*

2). Add marinara sauce to an oven safe dish.

3). Top marinara sauce with hummus, using a rubber spatula to spread evenly, then sprinkle the vegan parmesan on top.

4). Bake for about 15 minutes, or until the hummus is warmed through and the tomato sauce is a bubblin’. If you’d like you can top with some fresh basil or dried herbs, a drizzle of EVOO, some chili flakes or even some fresh diced tomatoes. Serve with bread, crackers or pitas and enjoy! (This recipe can easily be halved or doubled as needed).

*I realize these temps aren’t exactly the same, but who the heck wants to heat their oven to 392°? I just try and round it out so it’s even for eithr C or F.

**I have microwaved this in moments of desperation(depression?). Not the best, but will do in a pinch.

*** If you aren’t vegan, you can sub goat cheese for the hummus and add real parm on top for a different dairy twist.
