Vegan Parmesan

 

Holy cow do I love this stuff. I put it on errrrrrrrrything and can never seem to keep it in stock at my house! Probably because I keep eating it by the spoonful haha whoopsies…

1 cup raw cashews

1/2 cup nutritional yeast

1 teaspoon salt (fine salt if you have it!)

1 teaspoon garlic powder

Add all ingredients into a food processor and pulse until it becomes a fine ground consistency, similar to the parmesan in a green can. You’re done!

*I actually don’t have a food processor (yet!)so I just use my immersion blender. It’s a bit trickier because you have to pulse it enough to break down the cashews, but not so much that it starts turning into cashew butter. But it can definitely be done with an immersion blender!
